Low carb noodles (available from health food shops
Chicken breast (cut into strips)
Mushrooms (chopped), Pak Choi, Chillies, , Spring Onions, Egg (hard boiled), Broth (we used Boullion - available from supermarkets)
Put the chicken breasts into an oven and cook for 30 minutes (or until cooked). Meanwhile add the mushrooms (chopped), Pak Choi, Chillies, Spring onions (cut) into a large pot & bring to the boil. For the broth, we used Boullion which is available from supermarkets. Ensure you use the reduced salt version as it can taste quite salty.
Once the chicken is cooked, cut into strips and add to the pot of ingredients.
Meanwhile, bring an egg (depending on how many people you are cooking for) to the boil until hard.
If you wish to add noodles, then use the low carb noodle variety. Available from health stores. Ensure they're washed before using. Add to the pot of ingredients. Once cooked, serve & add the boiled egg and chillies to the top.
There you have it. A really filling, low carb meal that's packed with vitamins and goodness.
